South Indian delish lunch box lemon rice recipe : lemon rice recipe is a rice-based dish which is widely prepared in South India. It is prepared by mixing cooked rice. although traditionally they do not form part of the recipe.
lemon rice recipe is especially popular in the south Indian state of Karnataka, where it has become a part of the daily diet. Also popular in Telangana. usually this dish is served for breakfast, lunchbox.
Generally this dish is prepared during festival seasons such as Ganesh Chaturthi, varalxmi vratham in south India where it is served as god & goddess prasadam. making this lemon rice recipe is very easy although is a quick recipe.
How to make South Indian delish lunch box lemon rice recipe :
Cooking rice :
1 Firstly in a large bowl take 2 cups rice. & wash for two times then add 4 cups water to it. cook rice in rice cooker or vessel.
2 Once rice cooked, then transfer to large pot and let the rice comes to the room temperature.
Preparing lemon rice :
1 Meanwhile, we need to start tempering. for that in a pan add one table spoon oil, let it heat on low- medium flame, then add 1/2 spoon mustard seeds, 1/2 spoon cumin seeds, slowly thy will begin to get splutter.
2 Further more, now add 10-12 red chilies fry till they get change the color slightly. add few curry leaves and fry. add 2 spoons Bengal gram and 3-4 spoons ground nuts. sauté till they get light brown color.
3 Next add 1 spoon turmeric powder to get yellow colored rice, it is also healthy. and add 1 spoon ginger garlic paste, sauté till it release raw smell by it self. next add salt to taste as per rice quantity, & add pinch of Hing then combine them once and remove from the flame.
4 Transfer to the rice, & add 2 lemons juice to the rice then mix gently with out breaking rice. if required add salt to taste.
Now lemon rice is ready to serve, you can serve for breakfast and put for lunch box

Step 1 In a pan add one table spoon oil and put the pan on the flame. let it heat for a minute.
Step 2 Add 1/2 spoon mustard seeds, 1/2 spoon cumin seeds and 10-12 red chilies, sauté for 30-40 seconds. seeds will begin to crackle.
Step 3 Add curry leaves fry till they get little crispy.
Step 4 Add 3-4 spoons ground nuts, 2 spoons Bengal gram. sauté till get light brown color.
Step 5 Add 1/2 spoon turmeric powder, 1 spoon ginger garlic paste.
Step 6 Add 1 spoon urad dal. sauté till they get light golden color, do not over cook. they will become hard to chew.
Step 7 Add Hing 2 pinches it will nice flavor to lemon rice and usually used in other pulihora.
Step 8 Salt to taste. add less salt while tempering, if it is not enough to taste check while mixing pulihora, taste it and add more if you want.
Step 9 Once done transfer to cooked rice (2 cups rice), here I have taken 2 cups of rice.
Step 10 Add lemon juice (2 lemons)
Step 11 Then mix gently without breaking rice using mixing spoon or with your hand, till all of them combined well.
Step 12 Once done, just transfer to serving bowl. then lemon rice is ready to Serve, you can serve for breakfast or lunch box.
Ingredients :
1 Rice - 2 cups
2 Lemon juice - 2 lemons juice
3 Mustard seeds - 1/2 spoon
4 Cumin seeds - 1/2 spoon
5 Red chilies - 12
6 Bengal gram - 2 spoons
7 Ground nuts - 3 spoons
8 Curry leaves - few
9 Hing - 2 pinches
10 Salt - required
11 Ginger garlic paste - 1 spoon
12 Turmeric powder - 1/2 spoon
13 Urad dal - 1 spoon
Instructions to follow for lemon rice recipe:

- once rice cooked fully. turn off the switch. then transfer to large pot and let the rice comes to the room temperature. by the time we need to start tempering.
- in a frying pan add one table spoon of oil, let it heat on low- medium flame, then add 1/2 spoon mustard seeds, 1/2 spoon cumin seeds, slowly they will begin to get splutter.
- now add 10-12 red chilies to the pan and fry till they get change the color slightly. add few curry leaves and fry till becomes little crispy, it will take only 30-40 seconds.
- And then add 2 spoons of Bengal gram and 3-4 spoons ground nuts. sauté till they get light brown color.
- next add 1 spoon turmeric powder to get yellow colored rice, it is also healthy. and add 1 spoon ginger garlic paste, sauté to get rid of raw smell. next add salt to taste as per rice quantity, combine all and add 2 pinches of Hing , just mix once, then turn off the flame.
- transfer to the rice, which was already cooked. then add 2 spoons of lemon juice. then mix gently with out breaking rice. if required add salt to taste. then lemon rice is ready.
