Puffy and soft poori | Puri Recipe with less oil absorption : Puffy and soft poori is one of the most popular traditional Indian snack & breakfast recipe, made with wheat flour, oil. and is a deep fired food recipe which is flattened dough in a round shape and deep fried in oil.
Poori's are most commonly served as breakfast or snack, it is also served for ceremonial functions.
Generally Puffy and soft poori served with side dishes such as aloo kurma, panner masala curry, chole. and besan curry. every one like this recipe, although widely prepared in India, and it has became regular recipe as once in a week.
This is actually my favorite breakfast, as I given detailed recipe along with few tips which helps us to get puri with less absorbed oil.

How to make Puffy and soft poori Recipe with less oil absorption :
Making puri dough :
Step 1 - Firstly take large bowl, sieve and add one bowl of wheat flour (or) your required amount of flour.
Step 2 - Next add pinch of slat to the flour, 2 small spoons of oil.
Step 3 - Now add water gradually to the flour, knead it to make smooth dough. (dough should not be over smooth ) should be little tight, help us role easily to make round shape.
Step 4 - Once done rest it for at least 15-20 minutes.
Rolling to puri :
Step 1 - Begin to make round balls by taking lemon sized dough using your palm. & make all balls and keep them aside.
Step 2 - Now dust the flour and roll this round dough evenly to round shape. puri should not be too thick (or) too thin. roll all puri.
Frying Puffy and soft poori :
Step 1 - Take large deep fry pan, and add required oil to it. puri it on the flame, let it heat.
Step 2 - Check oil whether its hot. once its hot, slid puri into oil.
Step 3 - Then fry puri on medium flame, one side for 5-6 seconds then flip to the other side to fry for 20 seconds. till it get change color to light golden color.
Step 4 - Once done transfer to the serving bowl. follow the same process for remaining puris.
Here given below steps wise instruction with photos:
1 In a large bowl, add one bowl wheat flour. sieve the flour before you add.
2 Add salt to taste and two spoons of oil. and mix well.
3 Add water gradually and knead to make dough. dough should be little tight, to absorb less oil.
4 Rest it for at least 15-20 minutes. because dough will reach full absorption and result soft dough.
5 Next , take lemon size dough, make round balls.
8 In a frying pan add required oil for deep fry and Heat oil. adjust flame on medium. then check whether oil ready. slid small amount of dough in hot oil. if its come up and start frying then oil ready to fry.
9 Once oil ready Slid puri in hot oil. fry on medium flame for 5-6 seconds one side.
10 Flip it to fry other side, fry both sides.
11 Then transfer to the tissue for oil absorption, and then transfer to serving bowl, then ready to serve.
12 Serve Puffy and soft poori with your favorite side dish.

Ingredients for Puffy and soft poori :
1 Wheat flour - one bowl (or ) (required amount)
2 Salt - 2 pinches
3 Oil - 2 spoons
Instructions for puffy and soft poori :

- Next add pinch of slat to the flour, 2 tea spoons of oil & combine them once.
- Now add water gradually to the flour, knead it to make smooth dough. (dough should not be over smooth ) should be little tight, help us role easily to make round shape.
- Once done with this step rest it for at least 15-20 minutes.
- Next begin to make round balls by taking lemon sized dough using your palm.
- Now dust the flour and roll it evenly to round shape. puri should not be too thick (or) too thin.
- Take large deep fry pan, and add required oil to it. put it on the flame, let it heat till it gets hot enough.
- Check oil whether its hot. you can check by adding small portion of dough in oil, if its came up immediately, oil ready to make deep fry. then slid puri into hot oil.
- Then fry puri on medium flame, one side for 5-6 seconds then flip to the other side to fry for 20 seconds. till it get change color to light golden color.
- Once done transfer to the serving bowl & serve Puffy and soft poori
