Easy capsicum tomato curry for rice - Capsicum tomato curry is a traditional Indian curry, generally prepared by capsicum, and tomatoes, chilies, salt. this capsicum curry can be prepare in various ways. such as masala capsicum curry, plain capsicum curry, potato capsicum curry etc..
I have made by tomatoes and capsicum, you can also prepare without tomatoes as plain curry, its a simple curry which can be prepare in short time. using tomatoes helps to get sour flavor which is actually good with capsicum combination.
Easy capsicum tomato curry is served with white rice or chapati, but I personally prefer with white rice.

How to make capsicum tomato curry for rice:
Preparing vegetables:
Step 1 Take 5-6 capsicums & wash them once and chop capsicum finely. then chop one onion and chop 4-5 green chilies.
Step 2 Furthermore take 2 medium size tomatoes and chop them finely. once done with cutting vegetables then keep all aside.
Making capsicum curry for rice :
Step 1 In a pan add one table spoon oil, and let it heat on medium flame
Step 2 Add 1/2 spoon cumin seeds & 1/2 spoon mustard seeds, slowly they will start to splutter.
Step 3 Add chopped green chilies, & sauté on medium flame till they get fried.
Step 4 Then add chopped onions, fry till they become transparent. then add few curry leaves sauté for 30 seconds, next add ginger garlic paste sauté for 30 seconds, it will release raw smell.
Step 5 Now Add chopped tomatoes, and turmeric powder, salt to taste. combine them once. let it cook on medium flame, till the tomatoes becomes soft.
Step 6 Once tomatoes becomes soft, add finely chopped capsicum, & combine with tomatoes. close lid and cook till capsicum becomes soft and fully cooked.
Step 7 Add 1/2 spoon sesame powder, 1/2 spoon coriander powder to add nice flavor to recipe, just combine again.
Step 8 Finally garnish with few finely chopped coriander leaves. combine once and turn off the flame, now serve this capsicum tomato curry for rice or with chapati, & enjoy.

1 In a fry pan add one table spoon of oil, and put the pan on the flame, let it heat for a minute. once oil ready adjust the flame low to medium. then add 1/2 spoon cumin seeds, 1/ 2 spoon mustard seeds.
2 Add chopped green chilies, sauté till get fried. it will take 1-2 minutes.
3 Next, add finely chopped onions, sauté till they get transparent on medium flame.
4 Add few curry leaves and sauté for 30 seconds, curry leaves becomes littlie crispy and then add ginger garlic paste, sauté till 30 seconds for release raw smell
5 Add chopped tomatoes, 1/2 spoon turmeric powder, combine all and cook on medium flame till tomatoes becomes soft.
6 Next, add chopped capsicum to pan, close lid and cook till capsicum fully cooked.
7 Once capsicum fully cooked, add 1/2 spoon sesame powder, 1/2 spoon coriander powder combine well.
8 Add few coriander leaves, just combine once, then turn off the flame. now capsicum tomato curry ready. you can serve this capsicum tomato curry with chapati or white rice.

1 Green Capsicums - 6
2 Tomatoes - 2
3 Green chilies - 5
4 Onions - 1
5 Salt - as required
6 Cumin seeds - 1/2 spoon
7 Mustard seeds - 1/2 spoon
8 Turmeric powder - 1/2 spoon
9 Ginger garlic paste - 1 spoon
10 Curry leaves - few
11 Coriander leaves - few
12 Oil - one table spoon
13 Coriander powder - 1/2 spoon
14 Sesame powder - 1/2 spoon
Instructions for easy capsicum tomato curry for rice - :
- Take 5-6 capsicums, wash them once and chop capsicum finely. then chop one onion and chop 4-5 green chilies, next 2 medium size tomatoes and chop them. keep all aside.

- Next, add 1/2 spoon cumin seeds, 1/2 spoon mustard seeds, they will start splutter.
- Add chopped green chilies, sauté on medium flame till they get fried.
- Then add chopped onions, fry till they become transparent. then add few curry leaves sauté for 30 seconds, next add ginger garlic paste sauté for 30 seconds.
- Add chopped tomatoes, turmeric powder, salt to taste. then cook on medium flame. till tomatoes becomes soft.
- Once tomatoes becomes soft, add finely chopped capsicum. close lid and cook till capsicum becomes soft and fully cooked.
- Next, add 1/2 spoon sesame powder, 1/2 spoon coriander powder. then mix well.
- Add few coriander leaves, next turn off the flame and transfer to serving bowl, serve Easy capsicum tomato curry with chapati, or rice.
