How to make Raw curry leaves chutney:
Tempering :
1 Firstly take 3 bowls of curry leaves, wash for one time and keep them aside.
2 In a pan, add one table spoon of oil, put this pan on the flame, and let it heat for a minute.
3 Once oil ready, add 1/2 spoon mustard seeds, 1/2 spoon cumin seeds, once they started splutter, then add 1/2 spoon urad dal. one spoon Bengal gram. then sauté on low to medium flame till they get golden brown color.
Frying curry leaves :
1 Add 3 bowls of washed curry leaves, fry on low flame for 10 minutes. till they fried and becomes crispy.
2 Furthermore 3-4 red chilies, sauté for 1-2 minutes. next add 1/2 bowl coriander leaves. then turn off the flame and let it cool till get room temperature.
Making raw curry leaves chutney :
1 Next, transfer them to a mixer jar. then add salt to taste, 1/2 spoon turmeric powder, one spoon ginger garlic paste, 1/4 bowl thin tamarind juice.
2 Grind it to smooth paste, by adding water, add water little bit, according to the amount of paste. and transfer to serving bowl.
3 Now curry leaves chutney is ready to serve Serve with idli or dosa.

Step 1 Put the frying pan on the flame, and add one table spoon of oil. let it heat for a minute.
Step 2 Add 1/2 spoon cumin seeds, 1/2 spoon mustard seeds, and 1/2 spoon urad dal to the pan. adjust the flame low to medium. and they will begin to crackle.
Step 3 Then, Add 1 spoon of Bengal gram. sauté for 1-2 minutes on low-medium flame. slowly they will get change color to light golden color.
Step 4 Once they get change their color slightly, Add 3 bowls of curry leaves.
Step 5 Sauté for 10 minutes on low flame. till the Curry leaves becomes crispy.
Step 6 Add 4-5 red chilies, sauté for 30 - 40 seconds.
Step 7 Add half bowl coriander leaves. sauté for one minute. then turn off the flame, let it cool down and wait till it comes to the room temperature.
Step 8 Then transfer this stuff to the mixer jar.
Step 9 Add 1/4 bowl of tamarind juice to mixer jar.
Step 10 Add 2 spoons of dried coconut powder.
Step 11 Add 1/4 spoon Turmeric powder and one spoon ginger garlic paste to the jar.
Step 12 Add salt to taste, and close with lid, then grind it to smooth paste.
Step 13 Once done, Transfer to serving bowl and serve Raw curry leaves chutney with idli or dosa.

- Transfer them to a mixer jar. then add salt to taste, 1/2 spoon turmeric powder, one spoon ginger garlic paste, and 1/4 bowl thin tamarind juice. then clos with idly.
- Grind it to smooth paste, if needed add water a bit. and grind again to get soft texture. once paste ready, transfer this paste to serving bowl.
- Curry leaves chutney is ready, Serve this Raw curry leaves chutney with idly or dosa.
