Aloo bonda recipe easy way Telangana style : Aloo bonda recipe or potato bonda is a tasty snack which is prepared by potatoes, gram flour, onions, green chilies, spices. by using gram flour we need to make aloo bonda batter like bajji batter.
It should have slightly thick flowing consistency, do not make over thick / or thin.
aloo bonda filled with boiled and mashed potatoes, and coated with gram flour / besan batter, and it is a deep fried snack. usually served with ground nut chutney, or tomato chutney.
Batter includes little amount of rice flour, which will helps us to make bonda little crispy, I have used Mashed potatoes curry to make this aloo bonda.
you can prepare potato stuff directly with mashed potatoes with out tempering. this method also would be fine, but The taste will be slight different when we compared to curry.

How to make Aloo bonda recipe easy way Telangana style :
Step 1 Firstly take 2 medium sized potatoes, place them in large vessel, and add required water in vessel. put this vessel on flame & boil potatoes till they become soft & fully cooked.
Step 2 Let them cool down by adding cool water, then peel off the potatoes. after removed skin of potatoes, mash them to smooth paste by using potato masher or else you can mash with your hand, once you done with this step just keep it aside.
Tempering :
Step 1 In a fry pan add half table spoon of oil, let it heat for a minute, furthermore add 1/4 of spoon cumin seeds,1/4 spoon mustard seeds, when they begin to splutter add one chopped onion, and 3-4 chopped green chilies. sauté them for two minutes on medium flame.
Step 2 Later, add few curry leaves fry for 30 seconds, they will become little crispy. then add mashed potatoes & combine all. sauté mashed potatoes for 1-2 minutes, it should be coat with Oil. & combine with other flavors.
Step 3 Add 1/4 spoon turmeric powder, salt as required, red chili powder as required, half spoon coriander powder, half spoon zeera powder, few coriander leaves. combine all of them and fry for 1-2 minutes, finally add two spoons of lemon juice just before removing from the flame.
Step 4 Let this potato stuff cool down for a while, later start making round stuffed balls, take small ball size potato stuff and make round ball. prepare all potato balls in same size.
Batter preparation :
Step 1 In other mixing bowl add one bowl of besan, 1/4 bowl of rice flour. sieve flour before you add to remove dust particles.
Step 2 Add half spoon crushed carom seeds, half spoon coriander powder, half spoon ginger garlic paste, half spoon red chili powder, salt 2 pinches, 2 pinches of cooking soda. then combine them well.
Step 3 Pour water little by little by mixing well to make a soft batter, make sure there are no lumps. it should be like a bajji batter, batter should not too thin because it would not coat well potato stuff.
Frying aloo bonda :
Step 1 Take a pan for deep fry, add required oil for deep fry. put the pan on flame. let the oil heat till hot enough
Step 2 Once oil ready for deep fry, adjust the flame on low- medium, then take prepared potato ball dip in batter, coat all sides, gently slid it in hot oil. make all bonda like this.
Step 3 Fry one side till get golden color then fry other side by turning bonda, fry them evenly till aloo bonda get golden brown color, once you done with this just transfer them to serving bowl & enjoy Aloo bonda `
Ingredients for Aloo bonda recipe easy way Telangana style :
- Besan - 1 bowl
- Rice flour - 1/4 bowl
- Cumin seeds - 1/4 spoon
- Mustard seeds - 1/4 spoon
- Potatoes - 2 medium sized potato
- Curry leaves - few
- Coriander leaves - few
- Turmeric powder - 1/4 spoon
- Salt - as required
- Cooking soda - 2 pinches
- Ginger garlic paste - 1/2 spoon
- Coriander powder - 1/2 spoon
- Zeera powder - 1/4 spoon
- Oil - required for deep fry
- Crushed carom seeds - 1/2 spoon
- Water - as required
- Green chilies - 3-4
- Onion - one small size.
- Lemon juice - one spoon
- Red chili powder - as required
Given below step by step recipe preparation photos :
1 Firstly, take two medium sized potatoes, boil potatoes till they fully cooked. then take out from flame, let them cool down by adding cool water. gently peel the potatoes & mash them to smooth paste, & keep aside.
2 In a fry pan, add 1/4 spoon cumin seeds, 1/4 spoon mustard seeds, when they begin to splutter, add One chopped onion, and 3-4 chopped green chilies, sauté for 2 minutes on medium flame. then add few curry leaves fry for 30 seconds.
3 Then, add mashed potatoes combine all, sauté for one minute.
4 Add half spoon turmeric powder, and red chili powder salt as required, and mix all.
5 Add half spoon coriander powder, half spoon zeera powder and mix well.
6 Finally add few coriander leaves, and squeeze one spoons lemon juice, combine once remove from the flame. let it cool down for 10 minutes.
7 Make small size round ball with potato stuff, prepare all potato balls in a same size.
8 Batter preparation: in a mixing bowl add one bowl of basan/ gram flour, and /14 bowl of rice flour.
9 Add 2 pinches salt and 2 pinches cooking soda, half spoon crushed carom seeds, half spoon ginger garlic paste. 1/4 spoon turmeric powder, 1 spoon red chili powder. then combine all.
10 Add water as required gradually to make batter, it should be like a bajji batter.
11 Heat oil for deep fry, Dip potato ball in bajji batter, coat well with batter and gently slid in hot oil.
12 Fry on low- medium flame, flip aloo bonda to fry evenly till they get golden brown color. and transfer them to a serving bowl.
13 Aloo bonda Telangana style/ potato bonda ready to serve. serve with your favorite chutney.
Tips of aloo bonda :
- You can also use small spoon for coating batter over potato stuff ball, and u can slid with spoon gently in hot oil. choose the small spoon which can be fit for ball size.
- Fry only on low- medium flame, to prevent aloo bonda absorb more oil & fry well inside properly.
- Add lemon juice just before removing from the flame, to have a sour flavor.
