Telangana style masala Vada recipe a popular crispy recipe which is prepared by soaked Bengal gram, coriander leaves, green chilies. is a deep fried snacks mostly found on street side food at evening time. served at evening tea time sacks.
You need to soak Bengal gram at least 3 hours, and no need to make smooth paste as it should be crispy, u can also add extra soaked Bengal gram to this prepared batter to get more crispy masala Vada.

How to prepare Telangana style masala Vada recipe :
Step 1 Initially, we need to soak Bengal gram, for that take one bowl of Bengal gram and wash for one time. again add required water then soak for 3 hours.
Step 2 After 3 hours drain water, keep 3 spoons of Bengal gram aside, then add soaked Bengal gram to mixer jar, and add 3-4 green chilies, ginger garlic paste 1 spoon, salt as required. then grind it to paste, do not grind it too smooth, do not over grind.
Batter preparation :
Step 1 Then, transfer this paste to mixing bowl, next add two medium size finely chopped onions, 1/2 spoon chat masala, 1 spoon cumin seeds, 1/4 spoon turmeric powder, 3 spoons soaked Bengal gram, adding soaked gram helps us to get crispy masala Vada.
Step 2 1/2 bowl coriander leaves, 1/2 spoon coriander powder, then combine all, and check taste once, if salt is required add it other wise no need to add. and no need to add water.
Step 3 Later apply oil to your palm and take lemon size dough, flatten it to round shape. in other way take polythene paper apply oil on it and take lemon size dough and flatten it gently to round shape.
Frying masala Vada :
Step 1 In other hand in a frying pan add required oil for deep fry and put on the stove, let it heat on medium flame. once oil is ready to fry adjust the flame on low to medium.
Step 2 Then gently slid prepared masala Vada in hot oil, and fry till they get golden brown color, then take our from oil, transfer to serving bowl. serve Telangana style masala Vada with tomato sauce and enjoy.
Ingredients :
1 Soaked Bengal gram - one bowl
2 Oil - required for deep fry
3 Coriander powder - half spoon
4 Chat masala - 1/2 spoon
5 Coriander leaves - 1/4 bowl
6 Salt - as required
7 Onions - 2 finely chopped
8 Green chilies - 3-4
9 Turmeric powder - 1/4 spoon
10 Ginger garlic paste - 1 spoon
11 Cumin seeds - 1 spoon

1 Firstly, take one bowl Bengal gram and soak for 3 hours.
2 After 3 hours drain them and add to mixer jar, and add 3-4 green chilies, one spoon ginger garlic paste, salt to taste.
3 Grind to paste, do not over grind, then transfer to mixer bowl.
4 In a mixing bowl add this paste and add 1 spoon coriander powder, 1/2 spoon chat masala, 1/4 spoon turmeric powder, 1/4 bowl coriander leaves, 1/2 spoon cumin seeds, two finely chopped onions. then combine all.
5 Apply oil to your palm, Take, small lemon size dough, flatten it to round shape.
6 Gently, slid it in hot oil, and deep fry till get golden brown color. then transfer them to serving bowl.

Soaking dal :
- Initially, we need to soak Bengal gram, for that take one bowl of Bengal gram. & and Remove if any dust particles in dal. check once & wash them for one time.
- Again add required water to bowl & soak Bengal gram for 3-4 hours. we need to soak minimum 3 hours.
Masala Vada dough preparation :
- After 3 hours drain water, keep 3 spoons of Bengal gram aside, then add soaked Bengal gram to mixer jar, and add 3-4 green chilies, ginger garlic paste 1 spoon, salt as required. then grind it to paste, do not grind it too smooth, do not over grind.
