Undralla payasam is a special sweet recipe which is prepared during Ganesh Chaturthi, it is prepared by rice flour, milk, sugar. and garnished with dry fruits, like raisins, cashews, almonds.
This Undralla payasam recipe or undralla prasadam recipe has been preparing as naivedyam for Ganesh Chaturthi, and it is one of the favorite naivedyam of lord Ganesh. even though this recipe is prepared by wheat flour in some regions.
Some people have been using coconut powder instead rice flour to make undralla prasadam recipe thick or some other people have been using rava / sujirava to make undralla prasadam recipe thick consistency.
I have used rice flour in this recipe to make tasty undralla prasadam recipe, I prefer rice flour for this recipe preparation.

How to make Undralla payasam for ganesh chaturthi :
Preparation of undrallu - biyyam pindi kudumulu
Step 1 Take large pan or vessel, add one bowl of water to pan and put it on the flame. let the water heat for 2-3 minutes. add pinch of salt, and one spoon of ghee, combine them with water.
Step 2 wait till water becomes hot enough, and Add one bowl of rice flour and stir continuously, flour will get absorb water, and becomes soft as well. Turn of the flame and let it cool for 4-5 minutes.
Step 3 After that knead to soft dough, no need to add water to make dough, boiled water is enough to make dough. it has equal quantity of flour and water.
Step 4 Grease your palm with ghee or oil and take small amount of dough, start making round ball in a round shape. make all undrallu like this in a same size. then keep them aside.
Preparation of Undralla payasam for ganesh chaturthi :
Step 1 Take another large pan or vessel, add 2 bowls of water to pan and put it on the flame. Let the water heat for 2-3 minutes on medium flame, after 2-3 minutes add prepared undrallu to pan.
Step 2 Cook for 5-6 minutes on medium flame, for boiling undrallu, later add one bowl of sugar, stir gently till the sugar get dissolve with water.
Step 3 Once sugar get dissolved in water, add 1/4 spoon of cardamom powder and combine with syrup. it will add good flavor to the payasm.
Rice flour batter preparation :
Step 1 In other hand Take one small bowl, add two spoons of rice flour to bowl, add 1/4 bowl water to it & mix well with out lumps. it will form as soft batter.
Add this prepared rice flour batter to pan, stir till all flavors are combined.
Final step for undralla prasadam recipe :
Step 1 Add half bowl of milk to pan & stir till it combine with them, close lid and cook for 10 minutes on low to medium flame. you can also check at middle to prevent spilling over.
Step 2 After 10 minutes check the consistency, it will become thick, & creamy. remove from the flame and add fried dry fruits, over the payasam. now enjoy the delicious creamy undralla prasadam recipe.

Undralla payasam for ganesh chaturthi
- Firstly, in a large vessel add one spoon of ghee, let it heat for 30 seconds.
- Then add one bowl of water and 1/4 spoon of salt to vessel. and let the water boil for2-3 minutes on medium flame.
- Sieve the rice flour and add one bowl of flour to boiling water. the amount of flour should be equal to amount of water.
- Stir continuously till it absorb water fully. then remove from the flame and let it cool for 5-6 minutes.
- Now, make small ball size round shape undrallu. before start grease your palm. make all in same size.
- Take a small bowl, add 2 spoon of rice flour to it and add 1/4 bowl water, then combine well without lumps, it will be form like thin batter.
- In a pan, add half spoon ghee, add 5-6 cashew nuts, 5-6 almond, 5-6 raisins, roast till they get change their color slightly. then remove from the flame.
- In same pan add 2 bowls of water and let the water boil for 2-3 minutes on medium flame.
- Add prepared undrallu (rice flour balls ) to pan and cook for 5-6 minutes on medium flame.
- Add 1/4 bowl, sugar mix till it dissolve, and add 1/4 spoon cardamom powder, combine all.
- Next, add 1/2 bowl milk, and rice flour batter which we prepared. mix once then cook for 15 minutes on low to medium flame.
- After 15 minutes check the consistency of Undralla payasam if you want more thick consistency then cook for 5 more minutes.
- Later, transfer to serving bowl and garnish with fried dry fruits.

1 Rice flour - one bowl
2 Ghee - 1 and 1/2 spoon
3 Cashew nuts - 5-6
4 Raisins - 5-6
5 Almond - 5-6
6 Cardamom powder - 1/4 spoon
7 Water - 3 bowls
8 Milk - 1/2 bowl
9 Sugar - 1/2 bowl

Making Undralla payasam for ganesh chaturthi :
Dough preparation :

- Add half bowl of milk to pan stir till it combine with them, close lid and cook for 15 minutes on low to medium flame. you can also check at middle to prevent spilling over.
- Later, check the consistency, it will become thick. Then turn off the flame and add fried dry fruits,
- Let it cool down and offer this undralla payasam prasadam to lord ganesha.
Tips for undralla prasadam recipe :
- Take equal amount of water and rice flour to get perfect dough consistency, of undrallu. if needed just just wet your hand to make them soft.
- You can also use wheat flour instead of rice flour to make Undralla payasam, or grated coconut.
- You can Store this Undralla payasam in refrigerator, for 5-6 days.
