Ridge gourd curry recipe with green gram or beerakaya curry is a regular Indian vegetable curry recipe, which is very easy and simple side dish for chapati and white rice. this Ridge gourd curry recipe with green gram is prepared by ridge gourd & split green gram.
There are different ways for preparation of ridge gourd curry, using Bengal gram, or split green gram, or ridge gourd with tomatoes. in this recipe I have used split green gram. this would be a best combination white rice or chapati or puri
You can use any of other dal to make this Ridge gourd curry recipe, there are different curry recipes with ridge gourd such as ridge gourd dal, masala ridge gourd, plain ridge gourd curry and ridge gourd chutney.

How to make Ridge gourd curry recipe with green gram / beerakaya curry :
Step 1 Firstly, take 2-3 medium size ridge gourd. peel them and wash for one time then chop into small pieces.
Step 2 In other hand take half bowl of split green gram, wash for one time and soak for 20 minutes.
Tempering :
Step 1 In a fry pan, add one table spoon oil, let it heat for two minutes on medium flame, then adjust the flame low to medium.
Step 2 Add half spoon mustard seeds, half spoon cumin seeds, when they started to crackle, add one finely chopped onion, sauté for 2 minutes till they become transparent.
Step 3 Next, add 7-8 chopped green chilies, sauté for 1-2 minutes, add few curry leaves fry till they become crisp. then add 1/4 spoon turmeric powder, one spoon ginger garlic paste, sauté for 30 seconds.
Step 4 Drain water from soaked split green gram, then add to pan and sauté for 3-4 minutes.
Preparing Ridge gourd curry with green gram :
Step 1 Add, chopped ridge gourd to pan and salt to taste then combine all, keep the flame on low to medium flame, then close the lid and cook for 5-6 minutes.
Step 2 Open lid after 5 minutes, and combine one more time to prevent over cook on one side. then add 1/4 spoon zeera powder, half spoon coriander powder, combine all and cook for more 5-6 minutes till ridge gourd becomes soft and fully cooked.
Step 3 Once curry cooked fully, add coriander leaves 1/4 bowl. combine once and remove from the flame. then Ridge gourd curry recipe with green gram is ready to serve.

1 In a pan add one table spoon of oil, let it heat for 1 minute, add half spoon mustard seeds, half spoon cumin seeds, when they started crackle add finely chopped onion. and suite for 2 minutes till they get transparent.
2 Next, add 7-8 chopped green chilies, sauté for 2 minutes. then add few curry leaves, sauté for 30 - 40 seconds. add 1/4 spoon turmeric powder and one spoon ginger garlic paste sauté for 30 seconds.
3 Add, green split gram and sauté for 3-4 minutes. till they fully cooked.
4 Then add chopped ridge gourd, add salt to taste, combine all then close lid, cook for 4-5 minutes on low to medium flame.
5 After 5 minutes mix curry for cooking evenly, and add half spoon coriander powder and 1/4 spoon zeera powder, combine all and cook till beerakaya curry fully cooked.
you can check with spoon by pressing on cooked ridge gourd. it will break easily and become soft. means its cooked fully. finally add coriander leaves combine once and then remove from the flame. and transfer beerakaya curry to serving bowl.

Ingredients :
1 Ridge gourd - 3 medium size
2 Spit green gram - 1/2 bowl
3 Onion - one
4 Curry leaves - few
5 Green chilies - 7-8
6 Salt - as required
7 Turmeric powder - 1/4 spoon
8 Ginger garlic paste - 1 spoon
9 Coriander powder - 1/2 spoon
10 Coriander leaves - 1/4 bowl
11 Zeera powder - 1/4 spoon
12 Oil - one table spoon
13 Cumin seeds - 1/2 spoon
14 Mustard seeds - 1/2 spoon
Tips of Ridge gourd curry recipe with green gram:
- Soak split green gram for 15 minutes at least, this will help you to cook fast and takes less time to fry.
- Flip curry while cooking for 5-6 minutes long, to prevent to over cook one side.
- You can also add 2-3 spoons of milk to this curry while cooking, so that it will add nice flavor and helps you to boil fast as well.
