Crispy Telangana chekkalu
About Recipe :
Crispy Telangana chekkalu or homemade chekkalu is a deep fried south Indian snacks recipe which is made by rice flour, is a deep fried snack which can be store for 15 -20 days. it is also called as biyyam pindi chekkalu and rice flour snacks.
Generally, Crispy Telangana chekkalu is prepared by using red chili powder, or green chili paste, i have prepared with green chilies paste as I like chili paste flavor in this recipe. you can add any of one as you wish to add.
Other ingredients are ground nuts, Bengal gram, urad dal, sesame seeds, curry leaves, coriander leaves, makes this this recipe more crispy and tasty as well. u can also add spring onions in this recipe, it would be a nice flavor.
There are several snacks prepared by rice flour, like murukulu, chakodi etc.., and we can enjoy them at lunch time along with sambar rice.
Crispy Telangana chekkalu Is a famous recipe which is widely prepared during tholi Ekadashi and Pongal festivals in Telangana state. these snacks are very crispy and tasty for evening tea time, and last for 2 weeks minimum.
How to make Crispy Telangana chekkalu - homemade chekkalu
Step 1 In a mixing bowl, add one bowl rice flour, sieve the flour before you add, 3 spoons of roasted ground nuts, 2 spoons Bengal gram, one spoon sesame seeds, one spoon urad dal, few curry leaves, few coriander leaves, salt as required.
Step 2 3-4 green chili paste, 1/2 spoon cumin seeds, 1/4 spoon carom seeds, 1/2 spoon turmeric powder, one spoon ginger garlic paste. Combine all with flour, and keep aside.
Dough preparation :
Step 1 Next, in a large vessel add one bowl of water and put it on flame, let the water heat for 2-3 minutes medium flame.
Step 2 Once water ready add prepared rice flour to vessel, and adjust the flame low to medium, and stir continuously till flour should absorb water.
Step 3 Then, remove from the flame, let it cool down for few minutes, do not knead when its hot.
Step 4 Once its came to room temperature, wet your palm and start kneading to soft dough. here no need to add water, if you want just wet your palm while kneading. then make a smooth dough.
Preparing Crispy Telangana chekkalu :
Step 1 Then, take lemon size dough, make a round ball, and flatten it littlie bit, prepare all in a same size.
Step 2 Take puri maker, and one rectangular shape polythene paper which can be cover both side of puri maker, open maker and put the polythene paper on both sides, apply oil on both side of the paper.
Step 3 Then, put prepared ball size dough on maker, close it and press gently, open and take out chekkalu from paper. do follow the same process for the remaining.
Frying chekkalu :
Step 1 On the other hand, add required oil to frying pan, let it heat till hot enough.
Step 2 Once oil is ready to deep fry, gently slid them into hot oil, and adjust the flame low to medium. fry till get golden brown color, then transfer to tissue and then serving plate. now Crispy Telangana chekkalu are ready to serve.
Ingredients :
1 Rice flour - 1 bowl
2 Water - 1 bowl
3 Cumin seeds - 1/2 cumin seeds
4 Carom seeds - 1/4 spoon
5 Coriander leaves - 1/4 bowl
6 Curry leaves - few
7 Oil - required for deep fry
8 Bengal gram - 2 spoon
9 Ground nuts - 2 spoons roasted
10 Urad dal - one spoon
11 Green chilies - 3-4
12 salt - as required
13 Sesame seeds - 1 spoon

1 Firstly, in a large mixing bowl add one bowl rice flour, sieve flour and add to bowl.
2 Add 2 spoons split ground nuts, 2 spoons Bengal gram, one spoon sesame seeds, 1 spoon urad seeds, few curry leaves, 1/4 bowl coriander leaves, 1/4 spoon carom seeds, 1/2 spoon cumin seeds, green chili paste, salt as required, 1 spoon ginger garlic paste.
3 Combine all, and keep aside.
4 In other pan add one bowl of water, and heat for 3-4 minutes, when water started boiling, add this flour to water and stir continuously, till flour absorb water.
Then remove from flame, let it cool down for 5 minutes.
5 Start kneading dough, no need to add water, if you want just wet your palm and knead to soft dough.
6 Take lemon size dough, make a round ball and flatten it a bit.
7 Take puri maker, and rectangular shape polythene paper, put it on puri maker, cover both sides, and apply oil on both sides of the paper, put the dough on paper and press gently .
8 Take out flattened round sheet from paper gently, keep it on paper or plate, in other hand heat oil for deep fry, once oil ready to fry, adjust the flame lo to medium, then slid prepared chekka in hot oil.
9 Fry till get golden brown color, .flip both sides to fry evenly, on low to medium flame.
Extra Tips for Crispy Telangana chekkalu :
- Spring onions are also one of the ingredient, you can add spring onions to get nice flavor.
- After preparation of round shape sheet, do not keep long time aside as they become dry, try to fry as quick as possible.
- You can add some oil while kneading dough to get soft sheet.
