Telangana style ladies finger rasam
About recipe :
Telangana style ladies finger rasam or Benda kaya charu recipe is prepared by ladies fingers, spices, tamarind juice. it is one of the regular recipe in Telangana state and tasty combination with white rice.
There are different styles in preparation of rasam in different regions, generally prepared in all days in a week and served at lunch time or dinner.
Telangana style ladies finger rasam includes basan flour /gram flour, to get thickness of rasam and adding extra tasty flavor to the rasam.
eventually add small peace of jaggery to rasam before 2-3 minutes when you remove from the flame, because it will helps us to adjust all flavors.
How to make Telangana style ladies finger rasam / Benda kaya charu :
Step 1 Firstly, take 1/4 kg ladies finger, wash them once and wipe out water with dry cloth.
Step 2 Chop them into big pieces like a rectangular shape, keep them aside for a while.
Tempering :
Step 1 Take one large fry pan or vessel, put it on the flame, add one table spoon of oil and let it heat for a minute. once pan ready, add 1/4 spoon cumin seeds and 1/4 spoon mustard seeds to the pan, adjust the flame on low to medium.
once they crackled, add 6-7 green chilies, split them before you add. then sauté for 1-2 minutes.
Step 2 Then, add one medium size chopped onion, sauté till they become transparent, it will take 1-2 minutes. next add few curry leaves and sauté for 30-40 seconds.
Step 3 Add 1/2 spoon ginger garlic paste, sauté till it release raw smell. then add 1/4 spoon turmeric powder, combine with them.
Step 4 Next, add chopped ladies finger to the pan, start frying them on medium flame. fry till they get crispy and it will take 5-6 minutes.
Making Telangana style ladies finger rasam :
Step 1 Furthermore, add tamarind juice to pan / vessel, no need to add thick juice, because it will become too sour. add tamarind juice according to the sour. which will adjust the taste.
combine juice with them, and add water one bowl according to the taste.
Step 2 By the time, in a small mixing bowl, add 3 spoons of besan, / gram flour. and add water half bowl to the mixing bowl, mix well till become soft batter. make sure there are no lumps in batter.
Step 3 Then add prepared paste to the pan, stir till batter combine with rasam. then add 1/2 spoon coriander powder and 1/4 spoon rasam powder, salt to taste, and one small piece of jaggery then combine them once.
adding jaggery to the rasam helps to adjust the flavors which we have added.
Step 4 Close lid, and cook rasam on low to medium flame for 15- 20 minutes. rasam will get thick consistency and fully cooked along with ladies finger.
Step 5 After that add few coriander leaves, then remove from the flame & transfer to the serving bowl and serve Telangana style ladies finger rasam with white rice.
Ingredients :
1 Ladies finger - 1/4 kg
2 Tamarind thin juice - 1 bowl
3 Besan - 3 spoons
4 Oil - one table spoon
5 Green chili - 5-6
7 Cumin seeds - 1/2 spoon
8 Mustard seeds - 1/2 spoon
9 Ginger garlic paste - 1/2 spoon
10 Curry leaves - few
11 Coriander leaves - few
12 Coriander powder - 1/2 spoon
13 Rasam powder - 1/4 spoon
14 Onion - 1
15 Turmeric powder - 1/4 spoon
16 Water - as required
17 Salt - as required
18 Jaggery - small piece

Preparing besan paste :
1 Firstly, in a mixing bowl add 3 spoons of besan and half bowl water, mix till get smooth batter without lumps, keep this batter aside.
Making Telangana style ladies finger rasam :
2 In a pan add one table spoon of oil, put it on the flame and let it heat for a minute. then adjust the flame low to medium.
3 Once oil ready, add 1/4 spoon cumin seeds, 1/4 spoon mustard seeds, when they started crackled. add 5-6 green chilies. fry for 1-2 minutes.
4 Add one chopped onion, sauté till onions get transparent, then add few curry leaves sauté for 30-40 seconds. they will become little crispy.
5 Add ginger garlic paste, and sauté for 20 seconds, it will release raw smell, then add 1/4 spoon turmeric powder, combine with them.
7 Once, ladies finger cooked for 5-6 minutes, then add one bowl of thin tamarind juice. and add required water to pan. if tamarind juice have enough sour. no need to add one more bowl of water. add water according to sour.
8 Combine them once, and add salt as required, coriander powder 1/2 spoon, 1/4 spoon rasam powder. and combine all.
9 Then add prepared basan paste / batter to the pan and stir well. cook for 15 minutes on low - medium flame. if needed cook for more 5 minutes. slowly rasam consistency will become thick.
10 Here I would like to add jaggery to rasam, (it is optional ), add piece of jaggery to pan, and mix till it dissolve in rasam. it will help us to adjust the flavors.
11 Finally, add few coriander leaves and combine leaves with rasam. then remove from the flame.
12 Now Benda kaya charu or Telangana style ladies finger rasam ready to serve. serve with white rice.
Tips to get tasty Telangana style ladies finger rasam :
- Do not add more tamarind juice add only required amount, that could lead to change the taste of remaining flavors.
- Add small piece of jaggery to adjust the all flavors.
- Cook on low - medium flame for 15-20 minutes last to get perfect consistency and combining all flavors.
- You can also add some pepper powder to it.
